Longevity noodles (Sou mein in mandarin) is made of salted dough which is in long and uncut form. It signifies long life in Chinese culture. Chinese consider this traditional noodle as an auspicious food to serve in one's birthday and during the Chinese New Year.
It's not difficult to prepare a home cooked longevity noodles. You can adapt it the way you like.
This long, flat, dry noodles resemble spaghetti. It's a bit chewy and there's less lye water. I'm the one that don't like to eat yellow noodles because of it's lye taste.
You can get this at any supermarket or chinese mini market. There's quite a few brands around.
Ingredients: (serves 1)
60g Dried Longevity Noodles (portion for 1)
4 pcs medium Prawns (shelled and deveined)
1 pc small squid (clean & cut into rings)
4 slices Shabu-Shabu Pork Slice - cut into 4 pcs lengthwise)
some carrot - julienned
1 clove Garlic - minced
Water for cooking Noodles
Pinch of Salt
1 tbsp Sesame Oil
Seasoning: (all mix together)
1 1/2 tsp Light Soy Sauce
1/2 tsp Oyster Sauce
1/4 tsp Dark Soy Sauce
1/2 tsp Sugar
2 tsp Water
Dash of White Pepper
Step by Step:
1. In a pot of boiling water, cook the longevity noodles as per the instruction on package. For this brand, I cook them in boiling water for 10 mins until it turn soft. I prefer the texture to be a bit hard. If you prefer a softer texture, do cook it a bit longer. Drain and set aside.
2. Heat up some sesame oil in a wok. Lay pork slices and let it pan fry till slight golden on both sides.
3. Add in minced garlic. Add prawns, squids, carrot and stir fry till fragrant & fully cooked.
4. Pour in the cooked longevity noodles and the seasoning sauce. Stir fry till noodles is coated with the sauce. Stir fry for a minute and dish up.
5. Serve immediately
