An economical dish using super simple ingredients and can be prepared by anyone at home.
Love the final touch up by squeezing in the lime juice that gives a tangy refreshing taste and bringing this dish up to a whole new level. Very appetizing. Try it yourself to believe this.
Ingredients: (serves 2)
2 medium Holland Potatoes - diced
1 medium Red Onion - sliced
10g Anchovies (Ikan Bilis) - rinsed
1/2 Red Chilli - cut
1/2 Green Chilli - cut
1 Limau Kasturi
3 1/2 tbsp Cooking Oil
Pinch of Salt
Pinch of Sugar
*optional : Red Chilli Padi 1-2pcs (if you like it more spicy)
Step by Step:
1. Cut all the above ingredients.
2. Heat up 2 tbsp oil in the pan and fry diced potatoes till golden brown for about 5 minutes or until soft. Remove & set aside.
3. Using the same pan with some leftover oil, put in anchovies and stirfry till about dry to get rid of excess water from the rinsing process. Once it start to dry up, add 1 tbsp cooking oil to the anchovies and continue stirfry till become golden brown. Remove & set aside.
4. Add another 1/2 tbsp of oil into the same pan and saute onion slices till fragrant. Add in both red & green chilli and saute for about 1-2 minutes until onions become soft.
5. Put back the fried potatoes & anchovies and mix to combine.
6. Finally, season with some salt & sugar. Do not add too much as the anchovies itself is already salty.
7. Dish up and served. Squeeze some lime juice (limau kasturi) before eating. Voila!!
