Chickpea Curry

Delicious chickpea curry to go with rice / naan / etc. Simple and delicious, loaded with flavor. I'm using canned chickpeas which allows for a fast, convenient dish.

Ingredients : (serves 2)

140g Canned Chickpeas (drained)

50ml Coconut Milk

1pc Tomato (cut wedges)

1 pc Shallots (minced)

2 tsp Curry Powder

few florets of Broccoli

100ml Water

1/2 tsp Sugar

1/4 tsp Paprika Powder

2 sprigs Curry Leaves

Salt to taste

1 tbsp Cooking Oil

1/2 tbsp Olive Oil

Black sesame seeds for garnishing

Dried chilli flakes for garnishing


Step by Step:

1. Grilled broccoli with some olive oil and pinch of salt until cooked. Set aside.

2. Heat up oil in pan, add in minced shallots. Saute for 3-4 mins until fragrant.

3. Add curry powder, paprika powder, tomatoes, chick peas, curry leaves. Toss for a minute.

4. Add water & coconut milk. Cover with lid, let it simmer till curry is thick and creamy

5. Season with salt & sugar. Dish up and garnish with grilled broccoli, chilli flakes and black sesame seeds.

6. Serve hot with steamed rice. Enjoy!
