Sharing one of my favorite dish when I eat banana leaves rice. Love the crunchy bittergourd to the max, super good.

Ingredients:
120g -140g Baby Bittergourd
1/2 tsp Salt
Oil for frying
Batter :
1 tbsp Plain Flour
2 tbsp Rice Flour
2 tbsp Corn Flour
1/4 tsp Salt
1 tbsp Bestari Fried Chic flour (mamak)
1/4 tsp Paprika Powder
4 tbsp Water
Method :
1. Rinse bittergourd and thinly sliced. Remove seeds as you cut.
2. Add 1/2 tsp salt to the bittergourd slices and let it marinate for 15 mins to reduce the bitterness.
3. After that, squeeze the excess water from the bittergourd.
4. Mix batter ingredients together. Pour into cut bittergourd and stir well to coat each pieces.
5. Heat up oil in wok. Put in bittergourd slices one by one. Not to overlap so that they doesn't stick together.
6. Fry both sides till golden and drain excess oil.
7. Serve immediately.
