Stirfry Spicy Turmeric White Oyster Mushrooms


Oyster mushrooms health benefits include antioxidant and anti bacterial properties. These mushrooms contain minerals like zinc, potassium, iron, calcium, phosphorus, and vitamins like B1, B2, C, folic acid and niacin. Eating oyster mushrooms regularly ensures that you get your daily quota of these nutrients, especially that of vitamins. The iron content in these mushrooms is higher than the iron present in meat – a common source for your daily iron. The potassium in oyster mushrooms is high enough to act as a preventive for heart disease and hypertension.

Turmeric has been used in India for thousands of years as a spice and medicinal herb. The powerful anti-inflammatory and antiseptic qualities of turmeric have made it a precious commodity for ages!

We combine these 2 powerful ingredients mentioned above & here's Spicy Tumeric White Oyster Mushroom recipe. Love the golden color of this dish & the aromatic curry leaves gives a distinct flavour to it.

As I chewing this, I discovered that it's texture really feel like eating chicken meat. No wonder this oyster mushroom is so widely used in vegetarian dishes.

Ingredients: (serves 2-3)

200g White Oyster Mushrooms

5 sprigs Curry Leaves

5 Red Shallots - thinly sliced

3 Dried Red Chillies

1/2 tsp Mustard Seed

1/4 tsp Turmeric Powder

1/4 tsp Chilli Powder

1/4 tsp Salt (or to taste)

2 1/2 tbsp Cooking Oil

Step by Step:

1. Wash & tear mushrooms into small pieces. Do not discard the stem.

2. Heat oil in pan & add in mustard seed.

3. When mustard seed starts to splut ter, add in sliced shallots, dried chillies & curry leaves.

4. Add turmeric powder. Stir to mix evenly and saute till fragrant & shallots start turning almost brownish. Sprinkle salt & stir to combine.

5. Add in mushrooms & chilli powder and saute them well.

6. As you stir, the mushrooms itself will release some water. No need to add any water.

7. Keep stirring to cook until all water content dries up. Saute for about 5 mins & make sure it really dries up and soaked up all the flavour.

8. Dish up & serve with steamed rice.
