Peanut Ang Ku Kueh (Steamed Glutinous Rice Cake with Peanut Fillings)


Ang ku kueh translates directly from Hokkien into “red tortoise cakes”. The Angku kuehs are moulded into the shape of a tortoise to signify longevity and it's red colour symbolises luck & prosperity. Traditionally, the Chinese would offer this for prayers or give to family & friends to celebrate newborn's full moon, birthdays as well as weddings.

Peanut Ang Ku Kueh is basically steamed glutinous rice cake with grounded peanut fillings. The chewy skin is made from glutinous rice flour and the fillings inside is usually sweet and have varieties of fillings such as grounded peanut, shredded coconut, mung bean paste or red bean paste.

My first attempt to make this red delicacy. The results are as good as the store-bought ang ku kueh. Love the chewy red skin and sweet peanut fillings inside mixed with castor sugar. If you don't have a mould, you can simply just shape it into round ball shape. Still taste as delicious..

Ingredients for Skin Dough: (Makes 9pcs)

100g Glutinous Rice Flour

100g Sweet Potatoes (Orange Color)

1 tbsp Cooking Oil

1 tbsp Sugar

2-3 drops of Red Food Coloring

50ml Warm Water

Ingredients for Peanut Fillings:

80g Roasted Ground Peanut

35g Castor Sugar

1 tbsp Water

1 tsp Roasted Sesame (optional)

1 tbsp Cooking Oil

Step by Step to Make the Skin Dough:

1. Steam sweet potatoes till soft about 15-20 mins.

2. Use a fork to mashed the sweet potatoes.

3. Prepare all the other ingredients in a big bowl & add in the mashed sweet potatoes. Mix till well combined. Set aside for 15mins. Use a damp cloth to cover the bowl.

4. Divide dough into 30g and shape into balls.

Step by Step to Make the Peanut Fillings:

1. Put all ingredients in a bowl and stir to mix evenly. Then set aside.

Step by Step to Shape the Dough:

1. Cut the banana leaves into rectangular shape, use a damp cloth to wipe clean, then spread some oil on the banana leaves.

2. Sprinkle some glutinous rice flour into the mould and knock off the excess.

3. Flatten the dough ball , place a spoon of the grounded peanut, cover and shape into ball.

4. Place the ball in the mould, press to flatten & filled the mould, then knock out and place on

greased banana leaf.

You may snips the corners of the banana leaves to make it oval shape.

5. Arrange on steaming tray and steam for 10 minutes over rapid boiling water.

6. Cool down on tray.
