Green Apple Lemon Fruit Enzyme

Never ever thought diy homemade fruit enzyme can be this easy peasy. To me it tasted like drinking honey water, very refreshing & nice to drink.
These beverages contain probiotics, antioxidants, and enzymes, as such, it can bring about many health benefits :
1) Improve digestive system and aids constipation
2) Maintain a high alkaline body ph
3) Boost immune system
4) Antioxidant
5) Improve skin tone & complexion
6) Lower cholesterol level

Ingredients :
4 pcs Green Apples
4 slices Brown Sugar in pieces (1 pack =5 slices)
1 pc Lemon

Step by Step :
1. Clean all the fruits, utensils (knife, chopping board, plates/bowl), glass containers and let it air dry to inhibit mould growth at the latter stage. Alternatively, you can dry them in the sterilizer.
2. Chop the brown sugar into small chunks using a chopper knife.

3. Cut apples into small thin slices after removing the core & stems.
4. Remove the lemon rind. Cut into small thin slices & remove all the seeds.

5. Arrange 1st layer of the cut apple (1 whole apple quantity) into the glass container, follow by few pcs of lemon slices. Top a layer of brown sugar.
6. Repeat step 5 above till all the fruits used up. Cover the last layer with brown sugar. Fill up the containers to about 80% and not more than that.

Note : I didn't really arrange it till very pack as I simply throw in.
(Fermentations process will release a lot of gases and may overflow if the contents are too full)

This photo taken after 5 hours. The sugar began to melt & mix into the juice. Look at the liquid at the bottom. The fruits layers began to sink, no longer as full as previously.
7. Close the container tightly and leave it in dry and cool place.
8. Tilt the container daily to ensure all the fruits are immerse in the liquid to prevent mold / fungus growth.
9. After 3-4 days, open the cover to release the gases and immediately close it back. If you seen any mold / fungus growth (black dot), remove the affected fruits immediately and add more brown candy (high sugar content / low water content can help to preserve the fruits)
10. The enzyme should be ready to be harvested & consumed in 2-3 weeks. Strain the enzyme and transfer into a clean sterilised glass bottle. Discard the fruits or feed to your plants as fertilizer for the soil.

The enzyme smells like beer! Look at that nice amber color!

11. Keep the enzyme chilled in the fridge to preserve it better (cool temperature will slow down the fermentation process that will turn the enzyme into alcohol). Consume within 3 months.
12. To consume, mix 2 table spoons of fruit enzyme with a cup (250ml) cool water.
