Had some leftover pumpkin in the fridge and made this healthy steamed dish - Stuffed Tofu Puff with Minced Pork & Pumpkin.
My tofu puff is quite small in size. If yours is bigger, probably you will only able to make about 12 pcs and flatter minced pork. Get those soft tofu puff if possible.
Ingredients: (makes 14 pcs)
7 pcs Tofu Puff (halves)
130g Minced Pork
70g Pumpkin (skin & seed removed)
1 pc Dried Chinese Mushroom - soaked & diced
Marinate:
1 tsp Light Soy Sauce
1/4 tsp Sugar
1/8 tsp Salt
dash of Pepper
1/2 tsp Corn Flour
1/4 tsp Sesame Oil
Sauce:
1 tsp Cooking Oil
3 slices Ginger
1/2 tsp Corn Flour + 1 tbsp Water = Starch
(Mix together the below)
50ml Water
1/2 tsp Oyster Sauce
1/2 tsp Sugar
1/2 tsp Soy Sauce
Step by Step:
1. Slice pumpkin thinly & steam for 15 mins. Then mashed it with a fork.
2. Cut tofu puff into halves. Separate out a 15g of the mashed pumpkin to be use in the sauce later on.
3. Mix mashed pumpkin, diced chinese mushroom & minced pork with all the marinate ingredients.
4. Using your finger, spread open the tofu puff in the center and fill them with minced pork mixture. Repeat the same for the rest of the tofu puffs.
5. Then, put to steam for 10 mins under rapid boiling water.
6. In the meantime, you can cook the sauce.
7. Heat the saucepan with oil and saute ginger slices till fragrant.
8. Then pour in the mixture of water, oyster sauce, soy sauce, sugar, balance of mashed pumpkin and bring to a boil. Discard the ginger.
9. Once boiling, slowly add in starch mixture while stirring continuously until your desired thickness.
10. Remove from heat & pour the sauce onto the cooked tofu puff before serving.
11. Serve hot.
