Chanced upon this Filipino simple Eggplant Omelette recipe - Tortang talong. This is a type of eggplant omelet where the cooked/broiled eggplants are soaked in a beaten egg mixture and then fried. This is a simple yet delicious Filipino recipe that you can enjoy for lunch or dinner.
Tortang talong is an budget friendly dish that won't hurt your wallet, yet satisfying dish to be serve with steamed rice.

Ingredients:
1 medium size Eggplant / Brinjal - whole, do not cut away it's crown & stem
1 Egg
Pinch of Salt
Dash of Pepper
1/4 tsp Fish Sauce
2 tbsp Cooking Oil
Step by Step:
1. Steam whole eggplant for 15-20 mins until skin turned brown & soft inside.
(Pic above) - I steamed it together when I steaming my rice.
2. Beat egg in a big plate. Add in fish sauce, salt and pepper & continue beating to combine.
3. Gently use a knife to slit open the eggplant in the center lengthwise and press abit to remove some water inside the eggplant.
3. Place the eggplant into the egg mixture and flatten using a fork. Flip the other sides of the eggplant to make sure they are dipped in the egg mixture.

4. Heat the pan and pour the cooking oil.
5. Holding the stem/crown, slowly put in the eggplant into the hot pan together with the egg mixture (you need a really hot oil). Fry the eggplant till both sides are cooked. Frying time will take you about 2-3 minutes per side on medium heat.
6. Dish up & sprinkle some light soy sauce before serving.
7. Serve hot.
