This Taliwang Roasted Chicken is a special cuisine originated from Lombok, Indonesia. It's spicy character mostly comes by marinating the chicken with lots of fresh red chillies and chilli padi (small chilli).
Ingredients: (serves 2-3)
5 pcs Chicken Drumsticks - rinsed & cleaned
Marinate (A)
1 Limau Kasturi - juice
1/4 tsp Salt
1/4 tsp Sugar
Marinate (B)
1 pc Medium size Tomato
5 pcs Red Shallots
2 pcs Big Red Chillies - seed remove
1 pcs Small Red Chilli Padi - seed remove
3 cloves Garlic
1/2 tsp Belacan
1/4 tsp Salt
1/4 tsp Sugar
* My version here is mild spicy. If you like it fiery hot, you can add in more chilli padis.
* More chillies can be added for a more spicy taste
*you may use chicken wings, chicken breast or even whole chicken.
Step by Step:
1. Marinate chicken with Marinate (A) above for at least 10 minutes.
2. In a blender, blend all Marinate (B) till become smooth paste.
3. Spread the chilli paste on the chicken and marinate the chicken for at least 2 hours or more. Keep them in the fridge.
4. Arrange chicken on line tray and bake at 200C for 40 mins or until brown using top & bottom mode. You can flip the chicken after 20 mins.
(roasting time may differs depending on chicken parts used. If chicken wings, time maybe shorten. If whole chicken, you may need longer time)
