Sticky Pineapple Chicken

Simple recipe served with rice. Sweet and sour, very appetising dish.

Ingredients :

100g Chicken Breast (cubed)

80g Canned Pineapple (cubed)

20g Roasted Cashew Nuts

3 pcs Baby Tomatoes (cut)

Seasoning Flour batter for Deep Frying


Sauce :

40ml Pineapple Juice from can

1/2 tsp Light Soy Sauce

1 1/2 tsp Sweet Chilli Sauce

1/2 tsp Corn Starch + water 1 tbsp


Method:

1. Marinate chicken meat with deep frying flour for 20 mins. Or follow frying method as per packaging.

2. Cook sauce : add Pineapple juice, light soy sauce and chilli sauce into pan. Bring to a boil, then and add in chicken cubes, cashew nuts and pineapple cubes.

3. Slowly stir in cornstarch slurry and toss to evenly mixed and sauce thickens.

4. Dish up and serve immediately.
