Bubur Cha Cha Sweet Dessert


Bubur Cha Cha, a well known Nyonya desserts, is basically sweet potatoes in coconut milk sweet broth. There's many variation of this Bubur Cha Cha recipe on the web coming from different countries in the South East Asia, but I think it all depends on what your family like to eat and what you cook. You can add in yam (taro), purple sweet potatoes, chewy tapioca jelly, etc.

Most recipe require the sweet potatoes to be cook / steam separately and boiling sago tapioca pearls separately in another pot, then mix together in coconut milk mixture. The reason behind is, all the ingredients require different cooking time. Even the cutting sizes of the sweet potatoes may change the cooking time.

Here, using Queen's Xense, I'm cooking everything together using the same pot. No pre-steaming required. No pre-soaking of sago tapioca pearls beforehand. All you need is to just follow the right timing. Total cooking time - 57 minutes to be accurate.

Ingredients: (serves 3-4)

300g Orange Sweet Potato - cut into cubes

170g Yellow Sweet Potato - cut into cubes

20g Black Eye Peas - soaked overnight

25g Sago (Tapioca Pearls)

900ml Water

3pcs Pandan Leaves (Screwpine Leaves)

100ml Coconut Milk

70g Rock Sugar

Step by Step:

1. In medium heat, bring water & pandan leaves to a boil.

2. Add soaked black eye peas & cook with lid covered for 35mins or until it's 90% softness.

3. Add yellow sweet potatoes and cook with lid covered for another 7 mins.

4. Then add in rock sugar, orange sweet potatoes & sago (tapioca pearls), covered with lid & continue to cook for 10 mins.

5. Finally, pour in coconut milk & let it simmer for last 5 mins. By this time, the sago (tapioca pearls) should turn transparent color, and the black eye peas & sweet potatoes will be soft enough & cook thoroughly. If the sago (tapioca pearls) still have a little white dot in the center, just covered the lid (no need to turn on the heat), let it sit inside for a while and hopefully it will turn transparent very soon as the Queen's Xense Casserole is still hot.

6. Dish up & serve. You can serve hot or chilled.
