Korean Chilli Paste Mapo Tofu


Mapo Tofu, this fiery Sichuan classic dish uses silky smooth tofu (beancurd) cooked with minced pork meat in thick gravy made from chilli paste & salted bean paste. The original recipe makes a very spicy dish that you lips will go red & sexy after the meal. Today I made some changes of the recipe by using Korean Chilli Paste instead of usual chilli paste. Simple & quick to put together. Not so spicy version & taste abit Korean.

Ingredients : (serves 2-3)

1 box Silky White Tofu (300g) 80g Minced pork (can replace with minced chicken meat) 1 cloves Garlic, finely chopped 1 tbs Minced ginger 100ml Water/no-salt chicken stock 3/4 tbsp Korean Chilli Paste

3/4 tbsp Salted Bean Paste (taucu) 2 tbsp Cooking oil

1/2 tbsp Corn starch mix in 2 tbsp water

Seasoning :

1 tsp Light Soy Sauce 1/2 tsp Sugar 1/2 tsp Shaoxing Wine 1⁄4 tsp Sesame Oil

Marinate Minced Pork :

1/2 tsp Light Soy Sauce

dash of White Pepper

1/2 tsp Shaoxing Wine

Step by Step:

1. Marinate minced pork & set aside for 15 mins.

2. Cut tofu into cubes about 2cm.

3. Add cooking oil in a heated pan, saute ginger & garlic till fragrant.

4. Add in minced pork & stirfry until cooked & separated. Use the back of the ladle or press the minced pork to separate it into small pieces. Stir for 1 mins.

5. Add in salted bean paste & Korean chilli paste & mix evenly.

6. Add in water & all the seasoning. Bring to a boil.

7. Carefully slide in the tofu cubes and gently stir into the sauce. Let it simmer for about 2-3 minutes until the sauce reduced a bit.

8. Slowly pour in starch mixture to thickens the sauce to your preferred consistency. Continue stirring once you pour in the starch mixture.

9. Once sauce thickened, remove.

10. Garnish with spring onions & serve hot with steamed rice.

* Spicy level for this recipe : MILD HOT. Add more chilli paste if you prefer more spicy.
