A simple and delicious dish. Great to serve together with rice or as a side dish. The mushrooms absorbs all the butter and soy sauce, taste so flavorful.

Recipe adapted from https://thewoksoflife.com/soy-butter-glazed-king-oyster-mushrooms/ with slight adjustment to cook smaller portions.

Ingredients : serves 2
250g Baby King Oyster Mushrooms
80g Broccoli
1 tbsp Butter
1/2 tbsp Light Soy Sauce
1/8 tsp Dark Soy Sauce
1/4 tsp Sugar
1/2 clove Garlic (grated or very finely minced)
Dash of Black Pepper
2 tbsp Cooking Oil
Step By Step:
1. First, prepare the glaze by melting 2 tablespoons of butter in the microwave. Then stir in the light soy sauce, dark soy sauce, sugar and black pepper. Mix well and set aside.
2. Carefully slice the mushrooms lengthwise into ¼” thick slices. Cut broccoli into small florets.

3. Heat up pan over medium high heat, with some oil. Add the first batch mushrooms in 1 layer, leaving them a little space to breathe so the mushrooms fry rather than steam.

4. Pan-fry for about 3 minutes per side, or until golden brown. Repeat to cook for the rest of the mushrooms. Dish up & set aside.
5. Add a bit oil into pan, saute garlic till fragrant. Add in broccoli and stirfry till cook. Add 2 tbsp of water and cover the lid for 1 minute to quick steam it.
6. Return all the cooked mushrooms back to the pan, pour in the glaze, and immediately turn off the heat. Toss the mushrooms in the glaze using the residual heat of the pan. Dish up and serve.

Happy Cooking.
