It was mango season recently. Bought some Golden Lily Mango previously and those were super sweet.
So we went to buy more and this batch was freaking sour that I decided to convert it to a dish. Got to marinate it with some sugar and it turns out great. No more sour taste and great combination to serve with vegetarian fish. What a great way to use them up instead of feeding them to the bin.
Zi Zhu Vege Fish are usually available in the frozen section in the supermarket. It's made from beancurd, rolled up like a log shape and then wrapped with seaweed.
Ingredients : (serves 2)
5-6 pcs Zi Zhu Vege Fish - sliced
130g Mango - julienned
1/2pc Shallot - sliced
2 tsp Sugar
4tbsp Thai Chilli Sauce
1 tbsp Cooking oil
Step by Step :
1. Defrost & Sliced vege fish to about 1cm thickness. Set aside.
2. Mix mango strips in a bowl with shallot, sugar, Thai chilli sauce. Stir till well combine. Set aside.
3. Meanwhile, heat up pan with some oil.
4. Lightly pan fry each sides of the vege fish till golden brown.
5. Dish up and arrange them on plate. Pour over the mango on top.
6. Ready to serve.
