Sharing this super easy way to cook pumpkin. Just a few simple ingredients to transfer this plump, nutritious orange squash to a homely dish, perfect for the young and old ones. The pumpkin will be braised until soft and mushy, absorbed the flavour from the dried shrimp. Just the right sweetness for this dish. Super easy, ready in less than 30 mins.

I love to add in the water that I used from soaking the dried shrimp instead of plain water, as it gives extra sweetness to the dish. No wastage.
Ingredients:
340g Pumpkin
10g Dried Shrimp (soaked & keep the water)
2 cloves Garlic
150ml Water (can add in dry shrimp water)
1/2 tsp Salt
1 tsp Light Soy Sauce
1 tbsp Cooking Oil
Step by Step: 1. Remove skin & seed from pumpkin. Rinsed & cut into 2 cm dice.
2. Heat up oil in wok. Saute garlic & dry shrimp till fragrant.

3. Add in diced pumpkin & toss for about a minute.

4. Add water, salt & light soy sauce. Let it cook for about 10 mins, stirring occasionally till pumpkin softened.
5. Dish up & serve with steamed rice.
