Got this idea from my friend who showed me her ang ku kueh in mooncake shape. It was so pretty and that made me into thinking them day and night. Then I told myself that I must make some of these moonies since Mooncake Festival is also around the corner.
This is definitely an Ang Ku Kueh post. Using mooncake mould to shape my ang ku kueh instead of the traditional tortoise shape. End result..
Isn't it beautiful? They do look so much like snow skin mooncake, but they are not. So pretty to admire them.
Following the same recipe as in my previous post, you can refer the list of ingredients used, how to prepare the mung bean fillings and dough. Here's the link.
You will need a mini 50g mooncake plunger.
1. Weigh & shape the mung beans paste into 23g ball each. 2. Weigh and divide the dough into 23g each. If you are using mix coloured dough, just combine everything & weigh.
Step by Step to Shape the Dough: 1. Use a damp cloth to wipe clean the banana leaves, cut into round shape slightly bigger than the mooncake shape, then brush some oil on the banana leaves. 2. Take a dough, shape round and then flatten it , put the filling on top, seal the dough and shape into ball again.
3. Prepare some glutinous rice flour on a plate. Dust the dough ball with glutinous rice flour so that it won't be sticking to the plunger mould. Alternatively, you can roll the dough on the flour as well, then dust off excess. 4. Carefully place the ball in the mould, face down with oiled banana leaf on the table, press a few times to make the pattern, then slowly press out to release.
5. Arrange on steaming tray.
Steaming: 1. Bring the water to boil. Put in the steamer tray with ang ku. 2. Reduce flame to low heat and steam for 5 minutes. 3. Open the cover, lightly brush the angku with some oil on the surface. 4. Then, continue to steam for another 5-7 minutes. 5. Let it cool down slightly before serve.
