Simple recipe but nutritious for small kids & adult alike.
Ingredients: (serves 2)
40g Pumpkin (cut into thin pieces)
3pcs Dried scallops (small) (soaked for 15 mins & retain the water)
1 pc Egg + Water = 70 ml
Shallot oil
Light Soy Sauce
* You can use the water from the soaking scallops to add into egg mixture.
Step by Step:
1. Steamed pumpkin & dried scallops for 15 mins until pumpkin turns soft.
2. Use fingers to shred the steamed dried scallops into thin slices.
3. Use fork to mash the pumpkin into puree.
4. Break egg in a plate & stir to combine. Add water, shredded dried scallops & mashed pumpkin. Stir mixture till evenly mix.
5. Bring water to boil for steaming. Once water boiling, put in the plate of egg mixture.
6. Cover and steam for 3 mins. Then turn of heat & open the wok cover to release the heat. Quickly cover back and let it sit for another 8 mins.
7. Remove from wok and drizzle with some shallot / garlic oil and light soy sauce.
8. Serve hot & best eaten with steamed rice.
