Another way to use up ample curry leaves growing in my garden. Curry leaves give a strong fragrant flavour to the dish. Simple and yummy. My mom recipe.
Ingredients : (serve 2-3)
12pcs Medium Size Prawns
1 tbsp Ginger - chopped finely
2 sprigs Curry Leaves - washed
3 tbsp Cooking Oil
(A) Marinate:
1/2 tsp Sugar
1/2 tsp Light Soy Sauce
dash of White Pepper
pinch of Salt
(B) Seasoning:
1 1/2 tbsp Oyster Sauce
1/2 tsp sugar
4 tbsp Water
Method:
1. Clean prawns and marinate them with (A) for at least 30 mins.
2. Heat up wok with oil. Add in marinated prawns and pan fried each sides for about 2-3 mins or until 80% cooked and skin turned slight golden.
3. Move all the prawns to the sides of the wok leaving the center empty.
4. (Add 1 tbsp oil to the center of the wok if all the oil being used up) Add in chopped ginger and lightly saute till fragrant. Then add in curry leaves.
5. Stir to mix everything and well combined for about 30 seconds.
6. Next add in (B) water, sugar and oyster sauce to the prawns.
7. Stir well & make sure all prawns are well coated with the sauce. Let it cook for about 1 minute,
8. Dish up & serve hot.
