Cravings for banana cake and grab some riped banana at the supermarket. Next day quickly turn them into this old fashion banana cake. The cake is soft and fluffy. Easy to make.
I halves the recipe for a smaller cake and omitted yogurt since I don't have yogurt in the fridge. So mine is a mini banana loaf.
Recipe adapted from Munira Bamadhaj of Glazed Bakery.
Ingredients:
170g Salted Butter
170g Fine Sugar
2 Large Eggs
1 cup Mashed Bananas (3 large)
2 tbsp Yogurt
1/2 tsp Vanilla Extract
227g Plain Flour
1 tsp Baking Powder
1 tsp Baking Soda
* optional : some pumpkin seeds for sprinkle on top
Method:
1. Preheat oven to 165C. Grease and line a 7x10" pan or 8x8".
2. Sift flour, baking powder and baking soda and set aside.
3. Cream butter and sugar till light and fluffy. Add one egg at a time. Add vanilla and yogurt.
4. Fold in mashed banana and flour mixture.
5. Pour into pan and level it out. Top with nuts / seeds if desired.
6. Bake for 30 minutes or until skewer comes out clean. Remove and cool on a wired rack.
