Something quick & simple, better than tapao (take-away) from outside hawker stall. You can do this with just anything you can think of, pork ribs, prawns, chicken wings, pork slices, etc etc..
Ingredients : (serves 2)
About 300g Chicken fillet / chicken breast
2 tbsp cooking oil
Spring onions
Marinade for chicken:
1/2 tsp light soy sauce
1/4 tsp sugar
Pinch of salt
1/2 tsp corn flour
Dash of pepper
Sauce : (mix all in a bowl)
1/2 tbsp Marmite 1/2 tsp Oyster sauce 2 tsp Light soy sauce 1/2 tbsp Sugar 1/2 tsp Corn flour 3-4 tbsp Water 1/2 tap Chinese cooking wine 1/4 tsp dark soy sauce Step by step:
1. Heat up oil in pan. Pan fried marinated chicken cubes till slighty brown. Dish up & set aside.
2. Pour in sauce mixture & give a quick stir as it thickens. Turn off heat.
3. Put back cooked chicken cubes & spring onions into the sauce mixture and stir till all chicken evenly coated with the sauce.
4. Dish up & serve hot with plain steamed rice.
