Thai Style Chicken

A sweet & sour, tangy thai style chicken dish. Simple to prepare, yet delicious enough for everyone in the family. Thai chilli sauce is rather on the sweet side. Non spicy at all.

Ingredients : (serves 2)
170g Chicken breast
4-5 tsp Kokok All Purpose Seasoned Frying Flour
Oil for frying
Marinade :
1/4 tsp Light Soy Sauce
1/8 tsp Salt
1/4 tsp Corn Flour
Dash of White Pepper
Sauce:
1 pc Shallot
1 pc Lime Juice (Calamansi)
3 tbsp Thai Chilli Sauce
2-3pcs Kaffir Lime Leaves
1 pc Lemongrass

Step by Step:
1. Diced chicken breast into small cubes. Like popcorn chicken size that you eat at KFC.
2. Marinade chicken with light soy sauce, salt, corn flour & white pepper. Set aside in the fridge & let it marinade for at least 30 mins to 1 hour.
3. Thinly sliced shallots & lemongrass. Use a sciccors to cut kaffir lime leaves into thin strips. Mix in thai chilli sauce & lime juice. Stir to combine & set aside for a more intense flavor infuse in the sauce.

4. Heat up oil in the pan.
5. Pour frying flour in a dry bowl. Coat chicken cubes with flour.

6. Fry chicken cubes till golden brown & remove. Strain excess oil & put onto plate.

7. Pour over the sauce mixture when it's ready to eat.
