Enoki mushrooms also known as needle mushrooms / enokitake mushroom are never exposed to sunlight hence they remain milky white in color. The enoki mushroom as sold in stores is characterized by its milky white hue, long stalk, and small mushroom cap. Enoki mushrooms offer loads of nutrients and antioxidants. Cherished for its health benefits, the enoki mushroom has been used in traditional Chinese and Japanese medicine for centuries as a tonic for liver disease, stomach ailments, high cholesterol, and high blood pressure.
This simple fail-proof recipe uses only 3 ingredients. This is really so so so yummy. I finished the whole batch all by myself. Must try it yourself ya!!!
Ingredients: (makes 10 patties)
1 packet Enoki Mushroom (standard packet size)
2 Eggs
1/4 Carrot (julienned)
Cooking Oil for pan frying
Seasoning:
1 tsp Light Soy Sauce
Pinch of Sugar
Pinch of Salt
Dash of Black Pepper
Dipping Sauce: (mix till well combined)
1 tbsp Lingham Sweet Chilli Sauce
1 tsp Mayonaise
Step by Step:
1. Rinse enoki mushrooms & cut into 3 parts short length.
2. Beat eggs in a big bowl / plate with all the seasonings.
3. Add in cut enoki mushrooms & julienned carrot into beaten egg mixture. Mix to combine.
4. Heat pan with some oil. Use a spoon to scoop a spoonful of enoki carrot mixture into the pan. Don't forget some beaten egg mixture as well.
5. Pan fried both sides till golden brown. Repeat the same for the rest of the mixture.
6. Dish up & serve with sweet chilli dipping sauce.
