Oven Grilled Mixed Herbs Chicken with Buttered Corn

I love to use mix herbs to marinate my chicken before grilling.

Mixed herbs/barbeque spice/bbq mixed herbs are normally contains ingredients such as brown sugar, paprika, onion powder, thyme, salt, garlic powder, cumin, and cayenne pepper. You can buy those off-the-shelf ready to use mix herbs which available in bottle type. Or you can diy homemade yourself with the recipe link here: http://homecooking.about.com/od/herbandspicerecipes/r/Dry-Rub-Recipe-blspice38.htm. Mine was store bought type.

Another type is Italian herbs which majorly consists of oregano, basil, marjoram, thyme, and crushed rosemary.

Whatever types of mixed herbs, you will sure so get a very distinctive flavor from the grilled chicken.

And I peeled my own corn kernels from the cob. I feel that there's just so much wastage by cutting/scraping it with a knife. See the video below here on how I do it. Fresh corn will be a bit difficult to work on. Best to leave it for 1-2 days in the fridge, and it will tends to come off easily.

Then I keep them in the freezer for future use. I use them to make buttered corn or add to fried rice.

I don't need to buy frozen corn anymore.

Ingredients: (serves 2)

2 pcs Chicken Whole Leg

1 tsp BBQ Mixed Herbs

1/2 tsp Salt

1/2 tsp Olive Oil

Step by Step:

1. Rinse chicken and dab dry with a kitchen towel.

2. Sprinkle salt & mixed herbs onto chicken & rub evenly.

3. Keep in the fridge and let it marinate for at least 6 hrs.

4. To roast chicken, rub olive oil on the base of the bake pan (I'm using glass bake pan)

5. Arrange chicken nicely, make sure not to stack on each other.

6. Grill in the oven at 170C using "fan grill" function. Grill for 30 mins or until chicken skin turn golden brown. No need to flip the chicken.

(The oven heat may varies between different brands of oven)

Ingredients for Buttered Corn :

1/2 cup Corn Kernels

3 cm Carrot (diced)

1 tbsp Butter

1/2 tsp Sugar

1/2 tsp Salt

3 tbsp Water

Step by Step to cook Buttered Corn:

1. Cook everything (except butter) in a small pan for about 5 mins until boiling hot.

2. Add in butter and continue to cook for 3 mins.

3. Dish up and serve together with grilled chicken.

4. You may garnish with some fresh salad as sides too.
