Sambal Hard Boiled Egg


Sambal hard boiled egg are best when served together with nasi lemak (coconut rice), fried mee, fried bee hoon, or just plain steamed rice.

My version, thick sambal, not spicy and slightly sweet. Simple to cook & prepare, just few basic ingredients needed.

Ingredients:

2-3 Hard Boiled Eggs

8pcs Dried Red Chillies

1 clove Garlic

5 pcs Shallots

Pinch of salt

1/2 tsp Sugar

1/2 tsp Fish Sauce

4 tbsp Cooking Oil

(Note: My dried chillies has turn slightly blackish in color due to room temperature storage & kept too long. Fresh dried chillies should be bright deep red in color. This will affect the end result of the cooked sambal color)

Step by Step:

1. Use the scissors to cut the dried red chillies lengthwise before soaking them.

2. After soaked for about 10 mins, you can rinse them under running tap water and the seeds will come off easily.

3. Put chillies, garlic, shallots and 2 tbsp of cooking oil in a blender. Blend till a smooth paste.

4. Using medium low heat, heat up 2 tbsp oil in the pan. Put in the blended chilli paste.

5. Cook till oil separates (about 4-5mins) and sambal turns darker color. Season with salt, sugar & fish sauce.

6. Add in hard boiled egg & mix to combine.

7. Dish up & serve.
