Sharing this super healthy Steamed Chicken with Pumpkin. The pumpkin will be steamed until just the right tenderness and absorb all the goodness & flavor from the chicken, ginger & fermented salted black beans.
Pumpkin is sweet in taste & warm in nature. Pumpkin helps to boost your immune system, lower blood sugar, nourish lungs, stops coughing, aids digestion, supports weight loss, promotes fertility, relieve anemia and constipation. It is rich in vitamins and minerals & high in fiber.
Ingredients: (serves 2-3)
270g Chicken
200g Pumpkin (weigh with skin intact)
5g Fermented Salted Black Beans
2-3 cloves Garlic - sliced
2cm Ginger - julienned
2 tsp Water
Seasoning:
2 tsp Light Soy Sauce
1 tsp Shao Xing Wine
1/4 tsp Sugar
Pinch of Salt
Dash of White Pepper
Step by Step:
1. Rinse chicken & cut them into small pieces. Marinate with the seasoning above for about 30mins.
2. Meanwhile, julienne the ginger & slice the garlic.
3. Cut away the thick pumpkin skin & discard the seeds. Cut pumpkin into smaller pieces with about 1 cm thickness.
4. Lay some julienned ginger on the base of the plate. Now, arrange chicken meat & pumpkin on a plate suitable for steaming. Alternate each piece of meat with a piece of pumpkin.
5. Sprinkle the balance of the ginger, garlic, 2 tsp water & salted black beans on the surface of the chicken.
6. Steam over rapid boiling water for about 15 mins under medium heat.
7. Remove & ready to serve. Serve hot.
