Simple sweet & sour Pineapple Black Pomfret Fish recipe. Kids will usually loves this dish as it is sweeten with tomato sauce. And you get them to eat their fruits too. This recipe is best served for lunch or dinner. Try it for yourself and enjoy.
Ingredients:
1 Black Pomfret Fish
70g Ripe Pineapple - cut into cubes
1 Red Shallot - cut into wedges
3 tbsp Cooking Oil
Seasoning:
75ml Water
3 tbsp Tomato Sauce
1/4 tsp Sugar
Dash of White Pepper
1/4 tsp Light Soy Sauce
1/4 tsp Chinkiang Vinegar (or any Black Vinegar)
* 1/2 tsp Corn Starch - add in 2 tbsp water to make starch mixture
Step by Step:
1. Heat oil in a heated pan.
2. Pan fried black pomfret fish till golden brown on each sides.
3. Remove fish from the pan to a plate & keep remaining oil in the same pan for making the sauce.
4. In the same pan, put in shallots and fry for about 1 minute.
5. Then add in pineapple cubes and stirfry for 30 seconds.
6. Add in all the seasoning ingredients and cook the sauce for about 1-2 minutes. (Test the taste here, if pineapple is sour, the sauce might be too sour, add abit more sugar)
7. Thickens the sauce with starch mixture by pouring in slowly while stirring continuously.
8. Once the sauce thickens, pour the sauce onto the fish. Ready to serve.
