1 person meal can be headache but it can be easy & simple too. Try this Salmon Fried Rice recipe. Remember, always use overnight cooked rice for a nice rice texture, minus the wetness from the starch.
Ingredients: (serve 1)
1 bowl Cooked Rice (Preferably overnight)
4pcs French Beans - cut
1 tbsp Corn Niblets (I use fresh corn from the cob)
1 tbsp Carrot - small cubes
1/4 quarter pc of Salmon - cooked (I pan fried) & mashed
1 Egg
1 clove Garlic - finely minced
1/4 tsp Salt (or to taste)
1/2 tsp Light Soy Sauce
1/4 tsp Fish Sauce
1 tbsp Cooking Oil
Step by Step:
1. Mash cooked salmon with a fork. Set aside.
2. Heat up oil in pan. Saute garlic till golden brown.
3. Add in french beans, carrot & corn niblets and cook for 1 minute. Sprinkle in salt and stir to mix evenly.
4. Add cooked rice, light soy sauce & fish sauce. Keep stirring for about 1 mins till dry.
5. Cracked in the egg onto the rice & break the yolk. Leave it (do not stir it), let the egg cook for about 30 secs before flipping it. Once you see the egg almost cooked, you can stir the rice and continue fry till the rice is dry. (No more stickiness from the egg).
6. Finally stir in mashed cooked salmon and stir to combine.
7. Dish up & serve hot.
