This silky steamed egg with Chinese Mushroom & Crabsticks taste just like chawanmushi but instead cooked on a small cups, this was cooked on a big plate.
I'm using just simple ingredients.
I didn't use any soup stock for this. If you have soup stock, you can replace that with water.
TIPS: If you want to soak chinese mushroom in a quick way.
Pour boiling hot water into a bowl, put in mushroom & a teaspoon of sugar. You will see magic happens very soon. Mine done in 20mins. (Depending on the thickness of the mushrooms). It's so much faster than soaking in room temperature water, and sometimes it takes an hour or so to get your mushrooms ready for cooking. Once it is soften enough, you can use a scissors to slice it. If you still find some hard parts in the center, continue soaking them till really soft.
Ingredients: (serves 2)
2 Eggs (I'm using Grade C eggs)
1 small Dried Chinese Mushroom - soaked & thinly sliced.
2 pcs Crabstick - defrost & cut into cubes
100ml Water
Dash of white pepper
Sauce:
(Mix all in a bowl and microwave for 20 secs or you can cook in a pan till sugar melted)
2 tsp Light Soy Sauce
5 tsp Water
1/2 tsp Sugar
1/2 tsp Cooking Oil
Some water for steaming
Step by Step:
1. Heat up some water in a wok to prepare for steaming process.
2. Beat eggs in a bowl. Then add in white pepper and water. Stir to mix evenly.
3. Then use a strainer to strain away some bubbles & some egg whites streaks.
4. Put egg mixture in a porcelain plate. (Type of plate will affects steaming time. If you are using metal/aluminium plate, cut short the steaming time). Just bear in mind, do not use glass plate for steaming)
5. Add in some crabmeat & sliced mushroom into the mixture and let it sink to the bottom of the plate. The balance of the crabmeat & mushroom to be put in a small bowl for steaming as well.
6. Once water is already boiling in the wok, put in the plate of egg mixture & also the balance of the crabmeat & mushroom (in another small bowl).
7. Steam on medium low heat for 8-10 mins with lid covered. Do not open the cover of the wok during steaming until at the 8mins to check for doneness. If the center is still watery, you can continue to steam for a while more or turn off the fire & let it sit in the covered wok until fully set.
8. Once egg done, put cooked mushroom & crabsticks (those that was steamed together just now) on the surface of the egg.
9. Slowly pour in the cooked soy sauce mixture.
10. Garnish with some coriander or spring onions before serving.
