Loofah with Glass Noodles


Loofah also known as petola in Malay, 丝瓜 in Chinese, some called it Angled Loofah or Luffa. This gourd is mild sweet in taste & spongy in texture. Loofah helps to treats constipation as it is high in fibre content. It is also anti-aging and is good for the complexion.

Ingredients: (serves 3)

1 Loofah about 320g whole (Petola)

20g Glass Noodles (Tang Hoon)

10g Dried Prawns

20g Frozen/Fresh Corn Niblets

5pcs Ginger - thinly sliced

1 1/2 tsp Cooking Oil

Seasoning:

125ml Water (can use water from soaking dried prawns & top up with water)

1/2 tsp Sugar

1 tbsp Light Soy Sauce

1/4 tsp Sesame Oil

1/4 tsp Salt

Starch mixture for thickening (optional)

Step by Step:

1. Heat up oil in pan, fry ginger till fragrant. Then add soaked dried prawns and fry till fragrant.

2. Then add loofah & stirfry for a minute.

3. Add water and all the seasoning sauce. Finally add in glass noodles. Let it simmer for about 2-3 minutes until loofah soften.

4. Optional : Add starch mixture and stirring continuously if you want a thicker sauce.

5. Dish up & serve with hot steamed rice.

Tips : When peeling loofah, peel thinly so that it can holds it shape better when cooked.
