This renowned scrambled egg with shark fin 炒桂花翅 dish aka Osmantus Flower Scrambled Egg is commonly seen and served as the first dish in the cold platters in most Chinese banquets meals. The golden scrambles egg resembles the Osmantus flower blooming, that's how the name comes about.
P/S : No sharkfin has been used in preparation of this dish.
Since, most of the people no longer favoured sharkfins in the meals, this dishes can be replicate by replacing it with glass noodles. In support of the campaign "I'm finish with fins" to save the environment & preserve sharks for our future generations. However, you can use vegetarian or imitation shark fins to replace it as well.
This dish can be easily prepared at home with just a few simple ingredients used.
Ingredients: (serves 3)
3 Eggs
10g Glass Noodle - soaked till soften & cut into 4-5cm strip length
1/2 Chinese Sausage (long type) - diced
1/3 Carrot - julienned
5 medium prawn - shell removed & cut into 3 parts
2 tsp Cooking Oil
Seasoning:
Salt to taste
Light Soy Sauce to taste
Dash of White Pepper
Step by Step:
1. In a heated pan add 1/2 tsp Cooking Oil.
2. Pan fried chinese sausage till it turn slightly brown & oil appears (about 40% cooked).
3. Then add in prawn and let it pan fry till prawn meat turns white & cooked.
4. Add in carrot & lightly stir till carrot soften for about 30 seconds. Remove from pan & set aside.
5. Use a chopsticks to arrange prawn meat in the base of a rice bowl.
6. Wash & clean pan. Add 1 1/2 tsp oil to heated pan. Use medium heat.
7. Beat egg with seasoning. Get ready a pair of chopstick.
8. Pour beaten egg & quickly stir continuously with the chopsticks until it turns scrambled egg like.
9. Add in the glass noodles, cooked chinese sausage & carrot.
10. Stir for about 1 mins and mix evenly & transfer all to the bowl. Use a spoon to press the surface of the egg in the bowl.
11. Leave egg for about 5 mins in the bowl to set the shape.
12. Then put a plate on top of the bowl & hold it tight when turning the bowl upside down before serving.
13. Garnish with lettuce before serving.
The good thing of using this Queen's Xense Casserole is the non stick surface. Even after cooking this egg dish, the pan is still clean. I can just use a kitchen towel/tissue to wipe away and I'm ready to cook the next dishes. No washing needed.
