Soft Pull-Apart Green Tea Buns


This Soft Pull-Apart Green Tea Buns recipe require no use of bread machine. 100% Hand kneaded buns.

Using Queen's Xense Casserole as the baking pan and put the whole thing to bake in the oven. Yes, it's safe to put it into your oven as a cake pan, bread pan or pizza pan. Just be careful when removing from the oven as it can be super hot, wear a thick gloves. Best of all, no need to oil the pan as it is already non-stick coated.

Ingredients : (makes

BOWL A

75g Bread flour

1 tsp Instant Dry Yeast

5 tsp Castor Sugar

1 tsp Green Tea Powder

20g Milk Powder (I omitted this)

100ml Warm water (42C)

BOWL B

75g Bread flour

20g Unsalted Butter (I used Emborg Salted Butter)

Pinch of Salt

Optional : Sesame seed as toppings

Step by Step :

1. Measure and put all powder ingredients in BOWL A. Pour in water. Using a spatula, mix until dissolved & become smooth batter.

2. Put all ingredients from BOWL B into BOWL A. Using a spatula, mix until become a rough big dough ball.

3. Transfer to table/board. Kned by hand for about 10 mins until dough become smooth.

4. Set aside & let it ferment & rise for 40 mins. Cover with a damp cloth on top.

5. Divide dough into 8 balls (about 35g each).

6. Shape each ball and place them on Queen's Xense Casserole. No need to oil the pan.

7. Set aside again & let it ferment / rise for 45 mins. Cover with a damp cloth on top.

8. Preheat oven at 175C.

9. Brush top of buns with eggwash or milk. *Optional : sprinkle some sesame seed on top.

10. Bake for 16-18 mins on fan mode.

11. Once buns cooled down, flipping the buns over is so easy. Buns do not stick to the pan even though I didn't oil the pan beforehand.

12. You may eat it on it's own or spread some butter & kaya. So yummy.
