Sweetcorn & Beet Root Soup


Apart from making juice from Beet Root, adding it to your soup is the next best thing. Beets helps boost the body's cellular intake of oxygen, making beets excellent overall body cleansers. Not only can they boost your energy and lower your blood pressure, but eating beets in the long-term can help you fight cancer, reduce arthritic pain, boost your brain as well as help you lose weight.

Love the Queen's Xense 24cm Casserole. The size is just prefect for making a pot of soup for 2 persons.

The soup is so sweet that I didn't add any salt to the soup. I'm used to salt-free soup for a more healthier version nowadays. Perhaps, you may add a pinch of salt, it will further enhance the sweetness in the soup.

Ingredients : (serves 2)

1pc small Beet Root (110g) - small one

1pc Carrot (160g)

1pc Sweet Corn

130g White Radish / Daikon

1pc Honey Dates

1L - 1.1L Water

160g Pork Bones

*Optional : Salt to taste

Step by Step :

1. Blanch pork bones in a pot of hot water to get rid of the smell & blood water. Remove & rinse the pork bones under running tap water.

2. Cut beet root, corn, carrot, radish into desired size. Don't cut too big piece, otherwise it takes long time to become tender/soft.

3. Filled Queen's Xense Casserole with water & bring to boil.

4. Add in all the ingredients & let it come to a boil over high heat. Do not cover lid.

5. Then reduce heat, cover lid and let it slowly simmer for about 60 minutes.

6. Optional : Add salt to taste (if needed).

7. Serve hot.
