Dragon fruit also known as Pitaya season is here again. One of the best super fruits known to have high fiber content, which can assist in constipation and poor digestion. It is also a natural source of anti-oxidants, high amount of Vitamin C, fights aging & good for the heart.
Using red dragon fruit in this fried rice gives a nice vibrant pink colour on every grain of rice. Add more colours to your plate. No articial colouring, all natural.
Ingredients : (Serves 1)
1 bowl Cooked Rice
3 tsp Red Dragon Fruit - use a fork to press/smash into puree
2 tbsp diced carrot
3 tbsp cut french bean
1 small Dried Chinese Mushroom
1/2 squid - cut into strip
1-2 pcs Prawn - deshelled & devein (keep the tail)
1 egg
3 tsp cooking oil
Seasoning:
dash of pepper
dash of salt
1/3 tsp fish sauce
1/2 tsp soy sauce
Step by Step :
1. Beat egg. In a heated pan, add 1 tsp oil & fried egg into scrambled egg by stirring it until it fully cooked.
2. Remove egg & set aside.
3. In the pan, add 1 tsp oil & stir fry carrot, french beans, mushroom, squid & prawn. Add pinch of salt & fry till fully cooked.
4. Remove & set aside.
5. In the pan, add 1 tsp oil & put in cooked rice. Add in seasoning & dragon fruit puree.
6. Keep stirring for about 4 mins until all evenly mixed & rice will turn into nice bright colour & dry up (dragon fruit will caused the rice to become slightly wet).
7. Add in scrambled egg & other cooked ingredients into the rice.
8. Mix evenly & remove from heat.
9. Ready to serve.
