Savoury Yam Rice with Minced Pork


Here's another easy recipe for Savoury Yam rice with Minced Pork. No need hassle to fried the rice in the wok. No need to worry the rice will stick to your wok/pan. Less oil, eat clean, eat healthy.

Ingredients (serves 3):

100gm yam, diced about 1cm x 1 cm or smaller abit

100gm minced pork (you may replace with minced chicken if you don't like pork)

4 medium size mushroom, diced

2 tbsp spoon of dried shrimp, coarsely chopped

2-3 shallots, thinly slices

3 portion of hot steam rice

2 cups of water

4 tbsp cooking oil

Seasoning sauce : (mix together)

2 tbsp soy sauce

1 tsp sugar

1 tbsp oyster sauce

1/2 tsp salt

dash of pepper

1/4 tsp of dark soy sauce

5 tbsp of water

Step by Step:

1. Heat up the pan with 2 tbsp cooking oil.

2. Add in the thinly cut shallot & fry it till it turn golden in colour. Remove & set aside.

3. Then, add the remaining 2 tbsp of cooking oil in a pan.

4. Add the chopped dried shrimp & fry till it become slighly golden & aromatic. Add in minced pork, keep stirfry & break up the big pieces of pork, prevent it to become big clump. Continue stir-fry till pork is almost cooked. Finally, add in diced yam & mushroom.

Continue to fry for 3 mins.

5. Add about 1/2 cup of water & pour in all the seasoning sauce into it.

6. Cover the pan & let it simmer. Use medium heat & simmer slowly. Open the lid once a while to check so that the gravy is enough to cover the ingredients. Add more water if it continue to dry out.

7. Keep repeat adding water & cook till yam turn soft & fluffy. Then cook till all the gravy sauce dries out. Remove from the pan.

8. Mix cooked yam with hot steamy white rice.

9. Garnish with fried shallots & chopped spring onion.

10. Ready to serve.

Note :

* Water needed to cook the yam might differ as different yam species/tenderness of yam is being used.
