Thai Style Paku Pakis with dried baby shrimp


Paku Pakis, a type of wild fern, some called it Pucuk Paku. Usually cook with belacan or eat as ulam. Today, here's something different to try. Easy to make with this simple recipe.

Ingredients : (serves 2)

5 tablespoon Dried baby shrimp

1 bundle of Paku Pakis leaves, only pick the young sprout. (the stem which are too hard to break are too hard to bite)

1/2 teaspoon cooking oil (for blanch Paku Pakis)

3 tablespoon cooking oil (for frying dried baby shrimp)

1/4 teaspoon salt

1/4 teaspoon sugar

Seasoning sauce : mix all together until sugar dissolved & set aside

1 small shallot

3 small lime juice (squeezed & seed removed)

2 tablespoons thai chilli sauce

1 teaspoon fish sauce

1 teaspoon sugar

1/2 red chillies (seed removed & minced)

Step by step:

1. Now, wash & soak Paku pakis for 3 mins to remove any those small hair from the plant.

2. In a pot of boiling water, add salt, sugar & cooking oil into it.

3. Then blanch Paku Pakis leaves for 3 mins or until cook.

4. Put Paku Pakis on a plate & remove any excess water. Set aside.

5. Do not soak or wash the dried baby shrimp. In a heated pan, add 3 tablespoon of cooking oil. Then add dried baby shrimp & fried until it turn golden brown. Do not use high heat as baby shrimp easily get burnt. Quickly remove baby shrimp from the pan & put on top of the paku pakis.

6. Finally, pour in the mix seasoning sauce into the paku pakis & its ready to be served.

7. Can be served as a dish or appetizer salad.
