Wintermelon longan tongsui / dessert itself is refreshing and soothing. Good for those having heaty bodies. It is a very healthy summer beverage for the whole family. This mid-autumn festival, I'm turning this wonderful tong sui into jelly mooncake.
Winter melon is sweet in taste and slightly cold in nature. You can buy those cut slices from the wet market or as a whole. You can get the small whole melon type with light green skin (the flesh is hard, compact, heavy). But the best is still the request-to-cut type, dark green skin, elongated melon at the wet market.

However, people with cold body constitution or suffering from diarrhea and urinary problem should not eat too much winter melon.
Ingredients : (makes 4)
(A)
750ml Water
390g Wintermelon (weight after skin & seed removed)
20g Dried Longan
55g Rock Sugar
(B)
1 1/2 tsp Agar-Agar Powder
1/4 tsp Instant Jelly Powder
8 tsp Water
you need : 4 in 1 pcs Mooncake jelly mould
Step by Step:
1. Remove wintermelon skin & shred them thick using mandolin. Rinse dried longan.
2. Bring water to boil in a pot, add in shredded wintermelon & dried longan. Boil for 30 mins.
3. Add rock sugar & continue to simmer on low heat for 8 mins or until sugar melted.
(I'm using portion of lo han guo sugar + rock sugar)
4. Scoop up 500ml of wintermelon soup, together with it's flesh & longan, transfer to another pot to boil the agar-agar mixture. The extra soup, you can just enjoy it chilled or warm as dessert.
(Pre-measure the mould capacity by filling up one of the mould with water, then pour into measuring jug to get the volume)
5. In a small bowl, mix 8 tsp water with agar-agar powder & instant jelly powder. Pour into the wintermelon soup and stirring continuously. Stir continuously and bring to boil for about 5 minutes till agar powder fully dissolved.
(if you pour agar powder straight into the hot water, it will cook them and turn lumpy, hence difficult to melt into the mixture)
6. Turn off heat. Soak pot in cold water for 5 mins to cook down abit before pouring mixture into mooncake mould.
7. Cool down at room temperature. Then transfer to fridge to set for at least 4 hours.
8. Unmould & serve chilled.
