Tomato Cheesy Baked Rice

Simple dish and something different from the normal fried rice. Just fried the rice like usual then add in canned diced tomato. Once done cooking the rice, then transfer to baking dish with shredded cheese sprinkle, and bake till cheese melt and turn golden and you are ready to serve. It's that easy.


For fried rice, you can use overnight rice or cooked them in the morning, then cool them down before use.


Ingredients: (serves 2)

Cooked rice from 1 cup rice

2 slice Back Bacon (cut small)

4 pcs Prawns (halves)

6 tbsp Canned Diced Tomato

1 Egg

1 1/2 Olive Oil

Shredded Mozzarella Cheese


Seasoning

Dash of Garlic Powder

Salt to taste

Dash of Black Pepper

2 tsp Light Soy Sauce


Step by Step:

1. Heat up wok with some olive oil. Fry egg scramble style.

2. Then add in bacon and prawns, lightly pan fry till fragrant.


3. Then add in cooked rice and toss till well combine.

4. Add seasoning, canned diced tomato and mix well. Toss until dry abit to reduce some moisture from the tomatoes. Otherwise it will cause the rice to be soggy.


5. Dish up and transfer to baking dish.

6. Add few spoons of diced tomatoes onto the rice. Sprinkle with shredded mozzarella cheese.


7. Send to bake in the preheated oven at 200C (top rack) for 15 mins or until cheese fully melted and turn golden.

8. Garnish with dried parsley flakes and serve hot.
