This is the cake base for a fondant birthday cake that i made for my son's 3 yrs old birthday recently. I need a heavy and moist cake as the cake base, so that it was able to hold the weight when I stack them up for a taller cake. Tried out the following recipe and it turns out great, easy instructions, the cake was well cooked, it was heavy and moist. Just what I wanted.

Adjusted the recipe to a smaller 6" cake using only 2 eggs. As I found the original recipe was a bit too sweet to our liking, I adjusted the sweetness to my own preferences by reducing the amount of condensed milk, sugar and cocoa powder too.
Made 2 x 6" cakes so that I can stack them and make a taller cake.

Ingredients: (makes 1 6'' round)
(A)
67g Condensed Milk
60g Sugar
50g Cocoa Powder
140g Milk
140g Corn Oil
0.3 tsp Salt
(B)
67g All Purpose Flour
0.6 tsp Baking Soda
0.6 tsp Baking Powder
(C)
2 Eggs (Size B)
1 tsp Vanilla
Step by Step:
1. Combine all ingredients (A) in a small pot, stir to combine and boil it. Keep stirring to prevent burnt bottom. Remove from heat when it starts to bubbling.
2. Prepare steamer and put in baking tin (lined with parchment paper for bottom & sides) to preheat.
3. Sift (B) together.
4. Beat (C) till well combined. Don't overdo till too much bubble. Just use a fork. No need whisk/blender.
5. Add (C) to (A). Use a whisk to stir till well combined.

6. Slowly add in (B) & fold with a whisk till no more lumps.

7. Pour batter into preheated pan, cover loosely with aluminium foil to prevent water condensation drops.


8. Steam for 35 mins using medium low heat (note to self :I'm using heat no. 2). Skewer should comes out clean when tested.
Notes:
Make sure there is enough water in your steamer to last the whole steaming process.
Only open the cover when the cake is about to be done.

The cracked ones was steamed on medium high heat. Hence, the cracked dome. The smooth dome was steamed on medium low heat. Anyway, since the dome need to be cut off, it doesn't bother me at all.
