Apple Cake

An apple a day keeps the doctor away. Yummy apple cake with apple chunks added into the batter and decorated with more apple slices on the top. This is just like the plain butter pound cake but with apples added. So yummy, with crunchy bites of the apples in every bite.


Ingredients : (makes 1 loaf of 20 x 8.5 x 4.5cm (H) )

1 pc Fuji Apple

110 g Cake flour

2/3 tsp Baking powder

100 g Unsalted butter

1/2 tsp Vanilla extract

Pinch of salt

80g Granulated sugar (Original 90g)

2 Eggs

1 tsp Honey (optional)

200ml filtered water + 1/2 tsp salt (for soaking apple)


Step by Step:

1. Line pan with baking paper. Preheat an oven to 180℃.

2. Half the apple. Peel half of the apple and cut into small dices, and slice the other half into 8-9 slices. Soak apples in salt water and then drip dry / lightly pat with kitchen towels to dry up. (Salt water prevent apple to turn brown - oxidised)


3. Sift flour & baking powder, and set aside.

4. Whisk butter with salt and vanilla until smooth. Add sugar and continue to whisk till pale & fluffy.

5. Crack eggs into the butter and beat to combine.


6. Pour in sifted flour together with apple dices. Fold to combine.


7. Put batter into baking pan and tap a few times to remove large air bubbles.


8. Bake in 180℃ preheated oven for 8-10 minutes.

9. Remove the cake from the oven and place the apple slices over the cake.

(Baking the cake for a short time before placing the apple slices, is to prevent them from sinking into the cake)


10. Return the cake to the oven and bake for 40 minutes more.

11. Let the cake cool in the pan for 10 minutes, then remove from the pan and let it cool completely.

12. Optional : I brush some honey over the top of the cake especially the apple slices to glaze.
