Sharing this, Soy Milk & Cincau (Grass Jelly) Mooncake. Black and white combination, inspired by the Michael Jackson drink that you can order at your local kopitiam here in Malaysia / Singapore. Why Michael Jackson? Because of his single Black or White.
Ingredients: (makes 4 pcs)
(A) Inner filling
1 tube Lychee Flavor Cincau
(B) Soy Milk Outer Layer 120ml Water
20g Sugar 1 1/2 tsp Agar-Agar Powder
1/4 tsp Instant Jelly Powder
300ml (1 bottle) Soy Milk
(C) Pandan Outer Layer 100ml Pandan Water ** 5 tsp Sugar 1/4 tsp Agar-Agar Powder
1/4 tsp Instant Jelly Powder
**Pandan water - blended from 2 pandan leaves + Water. Then strained to get the pandan juice.
You will need : 1 x 4pcs mooncake jelly mould
Step by Step:
1. Cut cincau (grass jelly) into round with 1.8cm thickness. (or 1-2mm lesser but not thicker than 1.8cm)
Cook (B) Soy Milk Outer Layer
2. Add agar-agar, jelly powder, sugar into a pot of water.
(Agar-agar and jelly powder should add into room temperature water and stir evenly, before turning on the heat to boil)
3. Slowly pour in soy milk into pot, stirring continuously. Once the mixture starts bubbling, turn off heat.
4. Pour a thin layer at the bottom and let it slight harden. Cool down to let it harden abit, should looks curdy.
(If you want colouring, you can mix in some colouring of your choice to make the flower pattern on the mooncake)
5. Slowly placed cut cincau in the middle of the mould.
6. Then pour the rest of the soy milk mixture and fill up. Set aside to let it cool down.
7. Meanwhile, in another pot, boil (C). Bring to boil. Once the soy milk layer already set (you can feel there's a thin skin layer formed), slowly pour in the pandan mixture and fill them up.
8. Leave to cool down and transfer to fridge to set completely at least 3-4 hours.
9. When ready to serve, remove jelly mooncakes from the mould and cut them into quarters size.
TIPS : Do not remove jelly mooncake from the mould until you are ready to eat. Jelly will release some water when oxidize.
