Nestum Chicken

Nestum Chicken. We love this dish because the crunchy Nestum flakes fried in butter and absorb all the strong aroma of the curry leaves. The golden sand were so good, we finished everything till the last bit.

I'm using chicken fillet strips or also known as chicken tenders. These strips of white meat are located on either side of the breastbone, under the breast meat. It taste exactly the same as breast meat and are tender and moist when cooked. Got them at the fresh market near my place here, where they sell this chicken strips separately at RM15/kg. Not many places sell them separately apart from the usual wings and drumsticks, as each chicken only have 2 pcs of strips.

You can use 3-in-1 packet Original Nestum to cook this dish. Otherwise the Original Nestum in tin/foil packaging works the same as well minus the milk powder content in it. Do not use porridge oat. It's a totally different thing.

Ingredients : (serves 2)

200g Chicken Fillet (cut into cubes)

1 tsp Oyster Sauce

1/2 tsp Light Soy Sauce

Dash of White pepper

Pinch of Salt

1/2 beaten egg

3-4 tbsp corn flour (for coating)

Cooking Oil for frying

2 tbsp Butter

1 Chilli Padi (add more if you can take spicy)

2 -3 springs of Curry Leaves, sprig removed

Cereal mix: (mix together)

50g Nestum Cereal

1.5 tsp Castor Sugar

1/2 tsp Salt

Step by Step:

1. Marinate chicken meat with oyster sauce, light soy sauce, pepper and salt. Set aside let it marinade for about 1 hour in fridge.

2. Pour in half beaten egg & stir to mix evenly.

3. Heat up oil in wok.

4. Meanwhile, pour corn flour in bowl. Dip chicken meat one by one to coat them before frying.

5. Once oil is hot, drop chicken cubes into oil one by one (so that they don't stick together). Fried till golden brown. Remove & strain away excess oil.

6. In another wok, using low heat, heat up butter until bubbly & toss in curry leaves & chilli padi. Fry till it release the fragrant smell.

7. Stir in the Nestum flakes & stir to mix evenly.

8. Then add in fried chicken cubes, castor sugar and salt. Toss thoroughly. The cereal should be lightly golden brown.

9. Remove & serve immediately.

Happy Cooking.
