Some days when we don't feel like eating rice, I made shepherd's pie. Easy 1 pot meal and the mashed potatoes are filling too.
When you dig in, you get a spoonful of mashed potatoes, meat, and vegetables all in one bite. It's just pure comfort food.
It's a way to clear up whatever leftover vegetables/meat or ingredients that you have, and it's totally optional up to individual preferences.

Ingredients : (serves 2)
240g Potatoes (2 medium size)
2 slices Luncheon meat (diced)
50g Broccoli
40g Corn
5 pcs Fresh Button Mushroom (sliced)
20g Carrot (diced)
1pc Shallot (minced)
1 tbsp Butter
Dash of Garlic powder
Dash of Black Pepper
Pinch of Salt
1 tbsp All Purpose Flour
50ml Milk
For mashed potatoes:
1/2 tbsp Butter
1 tbsp Milk
20g Shredded Mozzarella Cheese
Dash of Black Pepper
Pinch of Salt

Step by Step:
1. Steam sliced potatoes for 20 minutes or until tender.
2. While the potatoes are steaming, saute the vegetables. Start by melting a tbsp of butter in pan, then add in minced shallot. Saute till fragrant.
3. Then add in diced luncheon meat and lightly pan fry it for about 2 mins to achieve some brown edges bits.
4. Add in sliced button mushrooms, corn and carrot. Quick toss for a minute till mushrooms soften.

5. Add in brocolli, milk, garlic powder, salt and pepper.
6. Quickly stir in 1 tbsp of all purpose flour to thicken up the sauce.

7. Dish up. (it's okay to only cook the vege 80% cooked as we are going to send them to bake later) Transfer to a casserole suitable for baking.

To prepare mashed potatoes:
1. Mashed the potatoes using a fork.
2. Add in butter, milk, black pepper, salt and cheese. Mix till well combined.
3. Spread mashed potatoes over the top of cooked vegetables and press lightly.
Rough up the surface of the mashed potatoes with a fork so there are peaks that will get well browned.

5. Bake in a 200°C airfryer and cook until browned and bubbling, about 10 minutes.
6. Garnish with parsley flakes & ready to serve.
