Sharing this healthy version of satay, using tofu. You can indulge without the guilty feeling. Serve them with spicy peanut sauce, onions and cucumber, just like eating the traditional meat satay.

The tofu is well marinated and not bland at all. So fragrant, love it so much.
I am using square tofu. Not really firmed tofu type. It's still soft but not silky smooth type like those tube tofu or box tofu. You can use any tofu of your choice, as long as it doesn't breaks easily. If you prefer firmed tofu (tou kwa), you can use that too.
Ingredients: (serves 2)
300g Tofu
Oil for brushing ( a dash of soy sauce for color)
Cucumber - cut into quarters
Onion - cut into wedges & loosen
Marinade:
2 stalk Lemongrass (use the white part only)
2 tsp Coriander Seeds (or 1 tsp powder)
1 tsp Tumeric Powder
1 tsp Curry Powder
1/4 tsp Garlic Powder
Pinch of Salt
1 tsp Light Soy Sauce
4 tbsp Water
Spicy Peanut Sauce
1 pc Red Onion (medium size)
1 clove Garlic
2 tbsp Chilli Boh Paste
200ml Water
2 tbsp Gula Melaka - chopped
35g Peanut
1/4 tsp Salt
2 tbsp Oil
You will need skewers, washed and soaked in water for few minutes, then dry well.
Marinate tofu the night before:
1. Cut tofu into large stick shaped. As for mine, I cut them into 3 from that 1 square block tofu.
2. Blend lemongrass and coriander seeds with 2 tbsp water till fine. Pour into small bowl, add in the rest of the marinade ingredients. Mix well.
3. Mix marinade ingredients in a large container enough to hold all tofu in a single layer. Let it sit in fridge and marinate overnight.
4. The next morning, tofu will turn yellowish. Flip the tofu to the other sides so it gets to soak in the marinating sauce as well. Return to fridge and ready to cook for lunch.
Prepare spicy peanut sauce:
1. Fry the dry peanut (no need wash) in medium heat with 1 tbsp oil till the skin turns dark brown. Do not overcooked or they will taste bitter. Let it cool down.
**(You can prepare this step days ahead & store them in airtight containers)
2. Then blend the peanuts with 2 tbsp water till fine. Set aside.
3. Blend red onion, garlic and chilli boh paste with 1 tbsp water.
4. Heat up oil in pan. Pour in blended chilli paste and saute on low heat till oil separates and fragrant.
5. Add in gula melaka and continue cooking for about 3 mins and gula melaka melts.
6. Add in water, blended peanut and salt. Stir to mix evenly. Let it simmer for about 5 mins.
7. Done. Turn off heat and set aside.
To grill tofu satay:
1. Heat up nonstick grill pan, brush some oil onto the pan. Place tofu onto grill and grill until each sides turns golden. It takes about 2-5 mins depending on your heat.
Brushing oil & soy sauce mixtures in between grilling.
*skewer inserted after they are grilled. If you are using the open fire BBQ grill, please stick in skewer before grilling.*
2. Serve as it or with spicy peanut sauce, onions and cucumbers.
