Missed kaya puffs so much. Used to buy from a pastry stall nearby, but due to mco, their business hours shorten or sometimes sold out. Ordered thru grab once from another seller but came dissappointed due to thick pastry and less sweet kaya, resulted the whole thing became rather tasteless.
Why not make it myself?? So here's my first attempt to make kaya puffs (kaya kok) with my extra homemade pandan kaya. Love the flaky pastry, taste just the way i like it - flaky pastry, pandan kaya (this is rare as usually they use normal kaya) that i made myself. Voila!!

Ingredients : (makes 5)
Water dough (水皮) :
70g Plain flour(普通面粉)
14g Butter or margarine (牛油或玛芝琳)
7g Oil (油)
1/8 tsp Maltose (麦芽糖)
6gm Castor sugar(细砂糖)
35 ml Water(水)
Oil dough (油皮) :
60g Plain flour(普通面粉)
24g Shortening(白油) - I used cooking oil

Step by Step :
1. Prepare water dough, mix plain flour & sugar till combine. Add butter, oil, maltose & water. Mix and knead till form dough. Set aside, covered in cling film for 20 mins.
2. Prepare oil dough, by mixing flour and shortening. Mix and knead till form dough. Divide into 5 equal portions. (about 17g each)
3. Divide water dough into 5 equal portions. (about 25g each)
4. Flatten water dough & wrap a portion of oil dough. Roll into a ball & pinch to seal the joining ends. Do the same for the rest and make sure to cover in cling film to prevent drying.

5. Use your palm to slightly flatten it, then using a rolling pin, roll it into a flat & thin long oval shape. Then roll it up like a log.
(remember to cover the dough while you are working on the rest, to prevent it turning dry)
6. Place the log vertically, roll it flat & thin again. After that roll up into a log. Repeat the same for the rest.

7. Take 1 pc, fold & squeeze both ends together & make into ball. Flatten them (using rolling pin) to get a thin long oval piece of dough.
8. Scoop 1 big tablespoon of kaya, fold the pastry dough into half, pinch the sides, pleat together the edges to seal.

9. Arrange kaya puff on baking tray.

10. Bake in preheated oven at 180C for 15 minutes. Remove from oven, brush egg wash on surface, send back to oven and continue baking for another 20 mins or till golden brown.
