Galaxy Art Jelly

Every piece is like and art to me. Love how both color blended together so nicely. Been staring at it and admiring the colors and layers before I decided to cut them into pieces.


Ingredients: (makes one 12 x 12 x 5cm (H) square container)

White Part :

25ml Coconut Milk

200ml Water

25g Castor Sugar

2g Agar-agar Powder

0.5g Instant Jelly Powder


Color Part :

300ml Water

35g Castor Sugar

1 tsp Agar-agar Powder

1/4 tsp Instant Jelly Powder

1 pc Pandan Leaves

1 drop Blue Colouring

1 drop Pink/Red Colouring


Step by Step :

To prepare the white part :

1. Combine coconut milk, water, castor sugar, agar-agar powder and instant jelly in a pot. Stir will well combine. Turn on heat and bring to a boil using medium low heat. Let it boil for about 5 mins till agar-agar fully dissolved.

2. Pour into 12 x 12 x 5cm (H) square container. Chill until set.


3. Once set, remove from container. Cut into half for easy slicing. Use a fruit peeler and gently shred thin strips.


To prepare the color part:

1. Combine water, castor sugar, pandan leaves, agar-agar powder and instant jelly in a pot. Stir will well combine. Turn on heat and bring to a boil using medium low heat. Let it boil for about 5 mins till agar-agar fully dissolved.

2. Divide mixture into 2 separate cups.

3. Add blue colouring into 1 cup and pink colouring into the other. As we only need a light shade, so I normally just dip the chopstick into the colouring and mix into the agar-agar mixture.

4. Pour half pink agar mixture into 12 x 12 x 5cm (H) square container. Gently lay the coconut strips by placing them onto the pink liquid and fold up half to create the curve lines. Repeat for the rest of the strips.

5. If the coconut strips is almost reaching the surface without much agar-agar mixture left, top up with the balance of the pink mixture and continue with coconut strips.

(Note : Step 4 & 5 above must be done quickly before the agar mixture hardens)

6. Once done, we need to pour in blue colouring. Best to transfer blue mixture into pouring jug or something with sharp pouring tip for easy pouring. Slowly and gently pour blue mixture from one corner. Do not gush to prevent a sudden big wave that will disturb the coconut strips layers and both colours mixed up. We want to create 1 side bluish, 1 side remain pinkish and the middle color combines & creating purple shade.


7. Leave the container there & let the mixture cools down and set. Do not move the container as you will shake the mixture.

8. Once set, transfer to fridge to chill and set further for at least 4 hour.

9. Cut and serve chilled.
