Sharing another comforting one-pot-meal - Emperor Herbal Chicken Pao Fan.
Easy to prepare, start by making the soup, then just add in the ingredients and lastly rice, bring them to a boil. If you love herbal taste & soup, this will be the perfect meal, especially on rainy days.
“Pao” 泡 means “submerging”, while “fan” 饭 refers to rice or simply means rice in soup. It's more commonly available in Singapore but rarely seen in Malaysia.
This one-pot-dish is so easy to prepare, start by making the soup, then just add in the ingredients and lastly rice, bring them to a boil.

Ingredients : (serves 2)
Cooked rice for 2 persons
2 pcs Chicken Drumstick
600ml Water
3 pcs Red Dates (medium size)
1-2 pc Dang Gui Herbs Slice
1 tbsp Gojiberries
1 tbsp Yuk Chuk
1 tbsp Dried Longan
6 pcs Dried Scallops (small) - soaked 15 mins
1/2 tbsp Hua Diao Wine
Salt for seasoning (optional)
Step by Step:
1. Add some oil to the pot, lightly sear the chicken drumsticks on all sides.
2. Add in water and all other ingredients (except hua diao wine) and bring to a boil. Reduce heat & let it simmer for 40 mins.
3. Then, add in hua diao wine and cooked rice.
4. Let it boil for about 4-5 mins for the rice to absorb all the flavor. Turn off heat. Season with salt. (for me I omitted as I find the soup tasty enough)
5. Serve hot and enjoy.
