Love this morel mushroom chicken soup. Soup full of umami, sweet and delicious even without any salt seasoning.
Morel mushroom 羊肚菌 which means "sheep intestine mushroom" are a precious wild grown fungus, due to the unevenness of its cap and shaped like a lamb belly.
Morels carry the highest amount of vitamin-D among the edible mushrooms. Morel Mushroom is a precious natural tonic, rich in protein, multivitamins and has more than 20 kinds of amino acid. It is good for the stomach, help with digestion, regulates the “qi氣” inner strength. Nourishes the kidney and brain. Strengthen the immune system and combat fatigue and stress and improve sleeping quality.
Ingredients: (serves 3-4)
4pcs Morel Mushrooms
300g Chicken Meat/ Carcasses
4pcs Dried Scallops
5pcs Red Dates (pitted)
1 tbsp Dried Longan
1 tbsp Goji berries
750ml Hot Water
Method:
1. Soak Morel mushrooms for about 10 mins until soften. Cut open with scissors and clean the inside of the mushrooms. Sometimes there's some dirt in it, most of the times, they all almost clean.
2. Put everything in the double boiler and boil for 2 hours on high heat.
3. No salt needed as all the ingredients contributes it's own natural sweetness to the soup.
4. Ready to serve hot.
