Mix Berries Yogurt Jelly Mooncake with Pineapple Fillings

Mooncake Festival is around the corner again. Most younger generations prefer to have colorful jelly mooncakes compared to the boring traditional baked mooncakes with either lotus or red bean fillings.

Here's, today I will be sharing this, Mix Berries Yogur Jelly Mooncake. If you love yogurt drink, you will love this sweet dessert. You can always replace with any other yogurt drink flavor of your choice.

Ingredients: (makes 4 pcs) PINEAPPLE FILLINGS 200ml Water 1 tsp Agar-Agar Powder 30g Canned Pineapple (cut into small cubesy) 15g Castor Sugar 1 pcs Pandan Leaves * You need 4 small egg tart mould. Try putting the cups into the mooncake mould to make sure it fits nicely into the center of the mooncake. COCONUT OUTER LAYER 120ml Water 25g Sugar 2 tsp Agar-Agar Powder 300ml Mix Berries Yogurt Drink You will need : 1 x 4pcs mooncake jelly mould

Step by Step to make Pineapple Filling: 1. In a pot, bring water, sugar, pandan leaves & agar-agar powder to a boil until fully dissolved.

2. Once the mixture starts bubbling, turn off heat. 3. Cut pineapple into small cubes. Divide pineapple cubes into tart mould evenly. 4. Pour agar-agar mixture into tart moulds (around 2cm to 2.5cm thickness to fit perfectly into the mould) and leave to set completely. (You may put in the fridge once it cools down for quicker setting time)

Step by Step to make Mix Berries Yogurt Outer Layer 1. In a pot, bring water, sugar & agar-agar powder to a boil. Stirring continuously to make sure it fully dissolved. 2. Reduce heat and add in yogurt drink. 3. Stirring continuously until mixture slightly bubblling, turn to lowest heat & keep them warm. 4. Now, get ready to assemble the jelly mooncake. Instructions to assemble the Jelly Mooncake: Before pouring the jelly mixture into the mould, slightly wet the mould. This is to prevent the mooncake jelly from sticking to the mould and easy removal later on. It's okay to have some water drops in the mould. 1. Pour 1cm to 1.5 cm of the yogurt mixture into the mooncake mould.

2. Leave to cool down until it is almost set. (You may put in the fridge once it cools down for quicker setting time) 3. Take out pineapple fillings jelly, carefully remove them from the tart mould and place them on a plate.

4. Take a toothpick to prick few holes on the semi-hardened yogurt Jelly. Use a spoon to drop a 1 tbsp of the yogurt mixture in the center of the almost set jelly. (This step is to make sure the pineapple fillings sticks & holds tightly and not easily separated by layer when you remove and cut them) 5. Carefully & slowly placed the pineapple fillings onto the center of the mooncake mould.

6. Next, fill up the mooncake mould with more yogurt mixture until it's full.

7. Leave to cool and set completely.

8. Transfer them into the fridge to chill for at least 3 hrs. 9. When ready to serve, remove jelly mooncakes from the mould and cut them into quarters size.

​TIPS : Do not remove jelly mooncake from the mould until you are ready to eat. Jelly will release some water when oxidize.
