These are not really melt-in-mouth types of cookies. I love this with the fact that they are firm enough to hold by my 3 year old son yet soft & crumbly enough for him to bite and melt in their little tongue.
Ingredients :
120g All Purpose Flour (sieved)
5g Potato Flour
85g Unsalted Butter
45g Castor Sugar
1pc Egg Yolk
Pinch of Salt
Step by Step:
1. Preheat oven at 175C. (Note to self: I only use 165C)
2. Cream butter till smooth.
3. Add sugar & salt, continue till well blended & butter turn pale in color.
4. Add in egg yolk and mix till well blended.
5. Gradually add in sifted flour & potato flour and mix till incorporated.
6. Put in fridge for 5-10mins if you think the dough is too soft to cut. (optional)
7. Dust your table top and cookie cutter with some flour, roll cookie dough thinly & use cookie cutter to cut out the cookie. Place them on non stick baking paper.
8. Bake in preheated oven for 15 mins, using fan mode lowest rack.
9. Remove tray from the oven & let cookies cool down on baking sheet for 5 mins before transferring to cooling rack. Alternatively, if you are not using the same tray again, you can just let it cool down entirely on the baking tray.
10. Store in air tight containers.
